Ingredients:

Dry Ingredients:

- 1 cup (150g) cornmeal

- 1 cup (120g) all-purpose flour

- 1/4 cup (50g) granulated sugar (adjust to taste)

- 1 tbsp baking powder

- 1/2 tsp baking soda

- 1/2 tsp salt


Wet Ingredients:

- 1 cup (240ml) buttermilk

- 1/2 cup (120ml) milk

- 2 large eggs

- 1/4 cup (60ml) melted butter or vegetable oil


Instructions:

Preheat the Oven:

1. Preheat your oven to 425°F (220°C).

2. If using a cast-iron skillet, place it in the oven to preheat as well. If using a baking dish, grease it with butter or oil and set aside.


Mix the Dry Ingredients:

1. In a large mixing bowl, combine the cornmeal, all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Stir until well blended.


Mix the Wet Ingredients:

1. In a separate bowl, whisk together the buttermilk, milk, eggs, and melted butter or vegetable oil.


Combine the Ingredients:

1. Make a well in the centre of the dry ingredients.

2. Pour the wet ingredients into the well and stir until just combined. Be careful not to over-mix; the batter should be slightly lumpy.


Prepare the Skillet or Baking Dish:

1. If using a preheated cast-iron skillet, carefully remove it from the oven and add a tablespoon of butter, swirling to coat the bottom and sides of the skillet.

2. Pour the batter into the prepared skillet or baking dish, spreading it out evenly.


Bake the Cornbread:

1. Place the skillet or baking dish in the preheated oven.

2. Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the centre comes out clean.


Cool and Serve:

1. Remove the cornbread from the oven and let it cool in the skillet or baking dish for about 10 minutes.

2. Slice and serve warm, with butter, honey, or your favourite topping.


Tips:

- Buttermilk Substitute: If you don't have buttermilk, you can make a substitute by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.

- Texture Variations: For a more cake-like texture, increase the sugar to 1/2 cup. For a denser, more traditional cornbread, reduce the sugar or omit it entirely.

- Add-Ins: Customise your cornbread by adding ingredients like chopped jalapeños, shredded cheese, or corn kernels to the batter.

- Storage: Store leftover cornbread in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 1 week. Reheat in the oven or microwave before serving.
