Ingredients (Serves 2-3)
For the Fried Rice:
2 cups cooked jasmine rice (preferably day-old)
2 tablespoons vegetable oil
2 eggs, beaten
200g (7 oz) boneless chicken breast or thigh, thinly sliced
4 cloves garlic, minced
2-3 Thai red chilies, finely chopped (adjust to taste)
1 small onion, finely chopped
½ cup bell pepper, diced (optional)
1 tablespoon soy sauce
1 tablespoon fish sauce
1 teaspoon oyster sauce
1 teaspoon sugar
½ teaspoon white pepper
2 green onions, chopped
½ lime, for serving
Fresh cilantro, for garnish
Instructions
1️⃣ Prepare the ingredients: Make sure your jasmine rice is cold and separated for the best texture. Slice the chicken thinly and mince the garlic and chilies.
2️⃣ Cook the eggs: Heat 1 tablespoon of oil in a wok or large pan over medium-high heat. Pour in the beaten eggs, scramble them quickly, and set aside.
3️⃣ Sauté the chicken: Add the remaining oil to the pan and cook the chicken until golden brown. Push it to the side.
4️⃣ Add aromatics: Toss in the minced garlic, chilies, and chopped onion. Stir-fry for about 30 seconds until fragrant.
5️⃣ Mix in the rice: Add the cold rice, breaking it up with a spatula. Stir well to coat everything in the flavors.
6️⃣ Season it up: Pour in the soy sauce, fish sauce, oyster sauce, sugar, and white pepper. Stir-fry for another 2-3 minutes.
7️⃣ Finish it off: Add the scrambled eggs, green onions, and bell peppers (if using). Stir for a final minute.
8️⃣ Serve & enjoy: Garnish with fresh cilantro, squeeze lime over the top, and enjoy hot!
